Mediterranean Marinated Chicken

Yields: 4 servings
Ingredients:
- Mediterranean Marinade - 1/2 cup olive oil 
- 1 teaspoon cumin 
- 1/2 teaspoon cardamom 
- 1/2 teaspoon smoked paprika 
- 2 cloves of garlic, grated 
- 2 tablespoons lemon juice 
- Sea salt and ground pepper, to taste 
- 4 chicken thighs 
 
- Greek Yogurt Sauce with Dill and Lemon - 1/2 cup CP-Meiji Greek Style Yogurt (Natural) 
- 1 clove garlic, grated 
- 2 tablespoons chopped or dried dill 
- 2 tablespoons olive oil 
- 1 tablespoon lemon juice and its zest 
- 1 pinch of cayenne 
 
Directions:
- Marinating the Chicken: - In a bowl, whisk together olive oil, cumin, cardamom, smoked paprika, grated garlic, lemon juice, salt, and pepper to prepare the marinade. 
- Place the chicken thighs in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, making sure it's well coated. Marinate in the refrigerator for at least 1 hour, or preferably overnight, to let the flavors penetrate the meat. 
 
- Cooking the Chicken: - Preheat the grill or a grill pan over medium-high heat. 
- Remove the chicken thighs from the marinade, shaking off any excess marinade. 
- Grill the chicken thighs for about 6-8 minutes per side, or until cooked through and nicely charred on the outside. The internal temperature should reach 75°C (165°F). Remove from the grill and let them rest for a few minutes before serving. 
 
- Preparing the Greek Yogurt Sauce: - In a small bowl, combine Greek yogurt, grated garlic, chopped or dried dill, olive oil, lemon juice, lemon zest, and a pinch of cayenne. Mix well until smooth and creamy. 
- Adjust seasoning with salt and pepper according to taste. 
 
- Serving: - Serve the grilled Mediterranean chicken thighs with a dollop of the Greek yogurt sauce on top or on the side. - Garnish with additional fresh dill and lemon zest if desired.
